Coriander vegetable omelette

This omelette enriched with carrots, parsnips and peas and flavored with fresh coriander will surprise your palate. Serve it with a salad and you will have a vegetarian first course. try also this lentil cappuccino recipe too.

Ingredients

1 onion

1 clove of garlic

250 g of carrots

250 g of parsnips

200 g of frozen peas

1 tablespoon of butter

salt

½ bunch of coriander

8 eggs

pepper from the pepper mill

1 pinch of nutmeg

How to proceed

Finely chop the onion and mash the garlic. Cut the carrots and parsnips into cubes and mix them with the peas. Melt the butter in a deep pan and fry all the vegetables for approx. 10 minutes. Salt and add the chopped coriander. Beat the eggs and season with salt, pepper and nutmeg. Pour them over the vegetables. Cook the omelette over low heat for approx. 20 minutes.
